Born in Brazil and raised in Queens, New York, Thiago Silva epitomizes the self-made, obsessive pastry chef. During high school, he entered C-CAP – Careers Through Culinary Arts Program – where he was fueled to graduate with his high school diploma while interning at Fauchon, the iconic French epicerie where he learned classic pastry technique. He then worked for three years under Chef Alfred Stephen at Olives restaurant in New York before moving on to Abe & Arthur, an EMM Group restaurant under which he’d eventually move into the Executive Pastry Chef position.

For six years, Thiago designed and implemented menus at EMM Group restaurants around the world including La Cenita, The General, and Catch in New York City. Alongside his restaurant menus and the daily responsibility of creating unique desserts for VIP patrons, he builds massive celebration cakes for celebrity clients including Derek Jeter, John Legend, Sophia Vergara, Lady Antebellum, Brook Shields, and the 2011 New York Giants Champion Team.

In April of 2015, Thiago competed on and won Food Network’s culinary competition show Chopped, donating his $10,000 win to C-CAP in appreciation for how their tutelage guided him into a very successful culinary career. He’s been honored with accolades including Zagat’s “30 Under 30” of 2013, Dessert Professional Magazine’s “Top Ten Pastry Chefs in North America” of 2015, and People Magazine’s “14 Sexiest Chefs in America” in 2015.

In December of 2015, Thiago left EMM Group after six successful years to focus on new challenges. He then helped open Union Fare in NYC, where the croissants were all the rage. Chef Thiago then moved his family to Massachusetts where he took on a position as Director of Chocolate at Chew Innovation. After 4 Years at Chew Innovation developing products for our market place, Chef Thiago is now set on opening his own Patisserie, STAY TUNED!
